cutting it short

I started shopping for a topic yesterday morning, but was uninspired until I rediscovered this quote in my ratty file of stuff people have written about family mealtime. This article sites an
So it’s taken me awhile to find my theme for March, but here I am … let’s talk about shortcuts.
And I really want to throw the door wide open on this one because truly, truly my biggest shortcut is to make stuff ahead. I don’t buy a whole lot of prepackaged stuff, though I lean on the discounted Hamburger Helper because: 1.) My kids eat it and 2.) I get those Box Tops for school. :)
So please leave your favorite shortcut/take-out item here so this old dog can learn some new tricks! Because, after all, at this blog it’s not about what we eat, it's about with whom we eat it!

Probably nothing you don't know already :-) - but:
- big bags of frozen veggies from costco
- big bags of frozen meatballs from costco
- cream soups as the basis for sauces
- never run out of pasta (costco again!)
- other things I never run out of are canned fresh tomatoes, tomato sauce, canned mushrooms, jarred pasta sauce, cream soups, grated cheeses (in the freezer - great excuse to go to the Hill for Saturday shopping!), um, I think that's it.
But you know me - my big thing is meal planning!
Actually, I hadn't thought about my pantry as a shortcut, but I guess it is. There are definitely certain ingredients I never go without. Thanks! I'd love a meatball recipe if you get a few minutes to share one. That's not something I usually make, but I know the kids would love it. Have a good weekend!
I am a big fan of Trader Joe's. Their frozen meals are not quite as processed as some that you see, which makes them a nice option for nights when I don't want to be creative. Right now I have potstickers and pad thai in my freezer, plus penne arrabiata.
Also, they have a lot of pre-chopped veggies, which seems like a waste on the one hand, and a lifesaver on the other. They are just healthy veggies, and you get to skip the chopping step, which at least seems faster!
Sorry for the late contribution to the shortcut ideas.... we were out of town when this posted, and I'm just now catching up :-)
My favorite shortcut, by far, is rotisserie chicken. I buy rotisserie chicken at Costco (very large whole cooked chicken for $4.99) and shred the meat for use in soups, salads, casseroles... you name it! Makes for a very easy, quick meal! This is a once-a-week event for me!
I'm a very big Costco fan, and there's a ton of Costco products I can recommend. The rotisserie chicken is by far one of my faves for ease and versatility!
